Ingredients for 4 servings:
- 8 m.-sized jacket potatoes, from the previous day
- 3 bell peppers, red, yellow and green, cut into cubes
- 1 bunch of spring onions, cut into rings
- 250 g mushrooms, brown, quartered
- 2 small garlic cloves, chopped
- 1 tsp vegetable broth, granulated
- Salt and pepper, from the mill
- ½ tsp curry powder
- ½ tsp turmeric
- some sour cream
- oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the vegetables in a little olive or sesame oil for about 5 minutes, then add the peeled and quartered or eighthed potatoes and sauté for another 5 minutes. Add the spices and a splash of water and stir well. Season with sour cream, mix everything together, and season to taste. It also tastes great with chicken breast or pork.
