Cauliflower and sweet potato mash

Ingredients for 2 servings:

  • 400 g cauliflower, about half a
  • 150 g sweet potato(s) (1 medium)
  • 10 g Parmesan
  • 200 ml broth
  • 10 g cornstarch
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Mashed potatoes with a twist, easy, low carb, low fat

Peel the sweet potato and cut into large cubes. Chop the cauliflower into florets. Simmer both together in lightly salted water for about 10 minutes. Then drain some of the cooking water (I always leave about 3 cm of cooking water and then add broth to taste). Mash everything with a potato masher until it forms a puree. Mix in the Parmesan cheese and season the puree with salt and pepper. As a main course, it makes two good portions; as a side dish, it probably serves four people. One portion contains approximately 24 g carbs, 2 g fat, and 9 g protein.
