Vegetables with feta cheese in bread

Ingredients for 3 servings:

  • 1 zucchini
  • 1 eggplant(s)
  • 2 bell peppers, red and yellow
  • 1 pack of feta cheese
  • oil
  • 3 cloves garlic
  • pepper
  • oregano
  • 1 ciabatta or other white bread

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

as a starter or side dish to meat

Dice all the vegetables and fry them with the garlic in very hot oil. Stir in the finely diced feta cheese and continue frying over low heat until the cheese is melted. Season with pepper and oregano. Don’t add salt; the cheese is salty enough. Cut the bread lengthwise and hollow it out. Fill with the mixture, replace the lid, and refrigerate. Then slice and serve as an appetizer with salad or as a side dish with meat.
