Zucchini quiche

Ingredients for 1 servings:

  • 225 g flour
  • 1 pinch of salt
  • 50 g butter, cold, in cubes
  • 20 g lard
  • 120 g ice water
  • 30 g butter
  • 150 g bacon, diced
  • 200 g leek(s), sliced
  • 300 g zucchini, cut into strips
  • 1 red pepper(s), cut into strips
  • nutmeg powder
  • 1 tbsp Dukkah (spice mix), optional
  • 2 tbsp mixed herbs, finely chopped
  • 4 eggs, size L
  • 2 tbsp natural yogurt
  • 120 g milk
  • 150 g cheese, grated
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 50 minutes; Total time approx. 3 hours 10 minutes

for 6 pieces

Mix the dough ingredients in a bowl. Using the dough hook on a hand mixer, knead until smooth. Wrap the dough in cling film and chill for at least 2 hours. Grease a quiche or casserole dish. Roll out the dough and place it in the dish, pressing up the edges. For the filling, melt the butter in a pan. Sauté the ham cubes. Add the vegetables and sauté gently until soft. Season the filling with salt, pepper, nutmeg, and Ducca. Add the herbs. Spread the vegetables over the dough. Preheat the oven to approximately 175°C (fan). Mix the eggs, yogurt, milk, and cheese in a bowl and pour over the vegetables. Bake the quiche for 45-50 minutes. The quiche is delicious hot or cold, served with a fresh salad.
