Mexican meatball soup

Ingredients for 4 servings:

  • 250 g minced beef
  • 250 g minced pork
  • 140 g rice, cooked
  • 1 egg(s), lightly beaten
  • ½ tsp chili powder
  • ½ tsp paprika powder
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 small onion(s), diced
  • 1 garlic clove(s), crushed
  • 300 ml tomato(s), pureed
  • 1 liter beef broth
  • 15 g oregano, finely chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine ground beef and pork, rice, egg, chili powder, paprika, and salt in a bowl. Form into walnut-sized balls and set aside. Heat oil in a saucepan and sauté onion and garlic over medium heat. Stir in passata and broth. Bring to a boil and add meatballs. Cover and simmer for 20 minutes. Sprinkle with chopped oregano and serve.
