Couscous salad with pineapple and mint

Ingredients for 4 servings:

  • 250 g couscous
  • 250 ml orange juice
  • 350 g pineapple pieces
  • 250 g Halloumi, diced and fried
  • 200 g peanuts, roasted and salted
  • 3 stalks of peppermint, including the chopped leaves
  • 1 lime(s), juice and zest

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bring the orange juice to a boil, sprinkle in the couscous, stir well, and let it swell. Add the pineapple chunks, halloumi, peanuts, chopped peppermint leaves, and lime juice and zest, and stir. Add a little salt if desired; however, the fried halloumi and peanuts should provide enough flavor.
