Hazelnut cake without flour

Ingredients for 1 servings:

  • 10 eggs
  • 250 g sugar
  • 300 g hazelnuts, ground
  • 1 tbsp baking powder
  • n. B. Amaretto, approx. 2 cl

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Preheat oven to 175°C. Separate the eggs. Whisk the egg yolks and sugar, and if using, the Amaretto, until very frothy, until a voluminous, thick mixture forms. Gradually stir in the hazelnuts and baking powder. Beat the egg whites until stiff. Then fold in. Grease a ring or loaf pan and sprinkle with ground nuts or line with baking paper. Pour in the batter and bake for about 30-40 minutes. If you like, you can then top it with any glaze you like.
