Asian coconut milk soup

Ingredients for 4 servings:

  • 500 g chicken breast or turkey breast
  • 500 ml coconut milk
  • 2 carrots
  • 1 bunch of spring onions
  • 1 small can of peas
  • 1 tsp, leveled ginger paste
  • 1 tsp, leveled coriander paste, green
  • 1 tsp, leveled curry paste, green
  • 2 dashes soy sauce

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the meat into pieces and fry in a deep pan. Peel the carrots and cut into sticks. Clean the spring onions and slice them into thin rings. When the meat is lightly browned, add the vegetables and continue frying until the meat is cooked through. Then add the coconut milk (shake well first). Also add the soy sauce, ginger paste, coriander paste, and curry paste. Let everything simmer gently for about 10 minutes. Add water if necessary.
