Warm zucchini and onion salad

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 1 large onion(s), red
  • 75 g ham, diced, raw lean
  • 150 ml cream or Cremefine
  • 2 tbsp cream cheese creme legere
  • 1 clove(s) garlic
  • 1 tsp sugar
  • some balsamic vinegar, white
  • 1 tsp oregano, dried
  • 1 tsp rapeseed oil
  • 1 tbsp basil, freshly chopped
  • a little chili flakes, dried
  • Salt
  • pepper, black

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

delicious vegetable side dish – served lukewarm – goes perfectly with fish & meat

Quarter the zucchini, remove the seeds, and slice into thin strips. Finely slice the onion. Heat the rapeseed oil in a pan and fry the onion. Crush the garlic and add it along with the oregano. Sprinkle the sugar over it and let it caramelize briefly. Then add the zucchini and fry. Season with salt, pepper, and chili. Deglaze the pan with a generous splash of vinegar and reduce over high heat until the liquid has almost evaporated. Then add the cream and continue to simmer the vegetables over low heat. Season again with salt, pepper, and balsamic vinegar. Finally, remove the pan from the heat and stir in the crème fraîche, the diced ham, and the freshly chopped basil.
