Green asparagus lamb's lettuce

Ingredients for 4 servings:

  • 50 ml olive oil
  • 1 bunch of green asparagus
  • 1 pack of ham cubes, optional
  • 1 large onion(s)
  • 2 cloves garlic
  • 1 handful of mushrooms, optional
  • Salt
  • Pepper, freshly ground
  • 1 pinch of freshly grated ginger
  • 250 ml balsamic vinegar, white
  • 1 handful of cherry tomatoes
  • 1 box of lamb’s lettuce
  • 1 pack of feta cheese from cow or sheep

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Heat the oil in a pan, cut the asparagus into small pieces and fry them in the oil. Cut the garlic into three pieces and mash it with a knife. Finely dice the onion. Halve the tomatoes. Add the diced ham (if desired), garlic and onion to the asparagus, season and fry well. If you like, fry a few mushrooms with it. Add the vinegar; be careful, it may splash! Add the tomatoes and sauté everything briefly over low heat. Trim the lamb’s lettuce and put it in a large bowl. Dice the feta and add it to the lamb’s lettuce. Either add the contents of the asparagus pan while it’s still warm and serve immediately, or let it cool before adding it. Mix everything well.
