Wild boar – onion – goulash

Ingredients for 4 servings:

  • 1 ½ kg game meat (wild boar), diced
  • 750 g onion(s)
  • ½ liter red wine
  • ½ liter of water
  • 1 tbsp Maggi
  • 50 g bacon, fatty, diced
  • Salt
  • pepper
  • Rosemary, ground
  • Condensed milk
  • Sauce thickener

Working time approx. 20 minutes; Total time approx. 20 minutes

Wild boar braised with onions in red wine

First, pour the red wine over the diced wild boar and let it simmer while you complete the remaining preparations. Peel and roughly quarter the onions. Dice the bacon and fry. Remove the wild boar from the red wine and sear it all over. Season generously with salt and pepper and a little rosemary. Then add the onions. Pour the Maggi sauce over the meat and pour over the red wine and water, ensuring everything is covered. Bring to a boil, then simmer in a covered pan over medium heat for about 1.5 hours, stirring occasionally. Finally, depending on the desired consistency, add a little canned milk and thicken with a sauce thickener. This also goes well with pasta or classic boiled potatoes and red cabbage.
