Ingredients for 2 servings:
- 20 g sesame flour
- 10 g wheat bran
- 10 g chia flour
- 20 g potato fiber or flour
- 20 g wholemeal spelt flour
- 150 g protein, e.g. from a wholesaler
- 1 tsp vegetable broth
- 1 packet of dry yeast
- some pepper
- some paprika powder
- some chives
- 150 ml water
- possibly salt for seasoning if the vegetable broth is not enough
- 50 g zucchini
- 50 g carrot(s)
- 50 g cucumber(s)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes
A fiber bomb
Mix all ingredients except the zucchini, carrot, and cucumber into a dough; it should form a smooth mixture. Add a little water if necessary until you reach the desired consistency. Season with salt and pepper to taste! Now finely grate the zucchini, carrot, and cucumber and fold in. Pour the mixture into a bread pan, preferably silicone, and place in a non-preheated oven at 160-180°C (convection oven). Bake for 60-90 minutes. Let cool, then remove from the pan and let cool completely. I like it best with cream cheese or ham. Or both.
