Ingredients for 1 servings:

  • 300 g flour (spelt flour or semolina)
  • 300 g low-fat curd cheese
  • 100g mozzarella
  • 10 g baking powder
  • 2 tsp salt
  • 100 g tomatoes, chopped, alternatively pesto

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Knead the low-fat curd cheese, salt, flour, and baking powder into a firm dough by hand. Divide the dough into approximately 10 equal-sized rolls and roll them out into smooth, round pieces. Cut the mozzarella into small pieces. Distribute the chopped tomatoes and mozzarella on the dough pieces. Alternatively, the dough can be filled with pesto or other ingredients. For pizza rolls: Fold the dough into a roll. For piccolini: Gently fold the edges of the dough. Bake at 200°C (top/bottom heat) for 15-20 minutes.
