Chicken and pear salad

Ingredients for 4 servings:

  • 500 g chicken breast or turkey breast
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika powder
  • 2 m.-sized pear(s)
  • 2 tbsp lemon juice
  • 50 g cream cheese, natural
  • 150 g sour cream
  • salt and pepper
  • Parsley
  • Lamb’s lettuce or other leaf salad

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

with chicken or turkey

Wash the chicken or turkey breast, drain, and cut into strips. Season with salt and pepper. Heat olive oil in a pan, sear the meat strips, sprinkle with paprika, stir, and cook for another 2 minutes. Then let cool. Wash, peel, quarter, and core the pears. Halve the pear quarters lengthwise again and cut into thin slices. Immediately toss with lemon juice. Mix the cream cheese with sour cream, stir in the pears and meat strips, season with salt and pepper, and let stand briefly. Serve garnished with parsley. Tip: Serve the poultry and pear salad over lamb’s lettuce or other leafy greens!
