Bacon-wrapped plums on arugula

Ingredients for 2 servings:

  • 20 prunes
  • 20 slice(s) bacon, thinly sliced
  • 1 bunch arugula
  • 1 bunch chives, chopped
  • 1 piece(s) Parmesan
  • 2 spring onions, finely sliced
  • Oil (pumpkin seed oil)
  • pepper
  • curry
  • Balsamic vinegar
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wrap the plums in the bacon and secure with a toothpick. Then season the bacon-wrapped plums with curry and black pepper and fry them in a pan with olive oil. Place the arugula in a bowl, then add the spring onions, chives, pumpkin seed oil, and balsamic vinegar, and mix well! Arrange the salad on plates, top with the roasted bacon-wrapped plums, and finish with fresh Parmesan cheese! Tip: If you want to serve this snack as finger food, leave the toothpicks intact! I usually break them off, though, so you can cook the plums on all sides.
