Wholegrain herb rolls

Ingredients for 16 servings:

  • 200 ml buttermilk, lukewarm
  • 20 g yeast, fresh
  • 1 tsp honey
  • 60 g butter, liquid
  • 1 tsp lemon zest, grated
  • 300 g wheat flour (wholemeal)
  • 200 g spelt flour (wholemeal)
  • 1 tsp salt
  • 2 tbsp herbs, finely chopped (parsley, chives, wild garlic)
  • 1 egg(s)
  • 1 egg yolk
  • 1 tbsp milk

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Mix the yeast in the buttermilk with the honey. Combine the remaining ingredients in a bowl and pour in the yeast milk. Knead everything into a smooth dough. Cover and let rise in a warm place for about 45 minutes. Knead the dough again, then divide into 16 pieces and form rolls. Place on a baking sheet lined with baking paper and let rise for another 30 minutes. Brush the rolls with the egg yolk and milk mixture before baking. Bake in a preheated oven at 200°C for about 20 minutes. TIP: You can also use another ingredient instead of herbs, such as chopped nuts.
