Ingredients for 1 servings:

  • 500 g spelt, finely ground, or wholemeal spelt flour
  • ½ cube of yeast
  • 350 g water
  • 1 tbsp honey
  • 1 tsp salt
  • 1 tbsp apple cider vinegar

Instructions

Working time approx. 25 minutes; Rest time approx. 10 hours; Cooking/baking time approx. 30 minutes; Total time approx. 10 hours 55 minutes

In a bowl, mix the yeast with the water. Add the spelt flour and all other ingredients and whisk vigorously with a spoon until the dough pulls away from the sides of the bowl. Cover the bowl and place it in the bottom of the refrigerator overnight. The next morning, break the dough up with a spoon, dust with flour, and form approximately 9 dough balls with floured hands. Place the baking sheet in a cold oven and bake at 230°C (top/bottom heat) for approximately 30 minutes.
