Baked quark potatoes

Ingredients for 8 servings:

  • 8 large potatoes, waxy
  • 250 ml water
  • 100 g cooked ham
  • 50 g butter
  • 100 g quark, full-fat
  • 3 tbsp crème fraîche
  • 2 egg yolks
  • 1 tbsp chives, cut into rolls
  • salt and pepper
  • 2 egg whites
  • Parmesan, freshly grated
  • Fat, for the shape

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

a nice side dish to roasts or on the buffet

Boil the potatoes until almost tender, halve them crosswise, and carefully scoop out the insides. Combine the scooped-out potato mixture with finely chopped ham, butter, quark, crème fraîche, egg yolk, and chives, and season with salt and pepper. Beat the egg whites until stiff and carefully fold them into the mixture. Stuff the potatoes with everything and place them in a greased baking dish. Bake at 170°C for approximately 15-20 minutes. Sprinkle with Parmesan cheese before serving.
