Baked shrimp

Ingredients for 4 servings:

  • 1 bunch of spring onions, without dark green, cut into rings
  • 1 garlic clove(s), finely chopped
  • 3 large tomatoes, skinned, pitted, roughly chopped
  • 1 handful of spinach (baby spinach), if desired
  • 4 tbsp olive oil
  • 4 tbsp dry white wine
  • Black pepper, ground
  • 400 g prawns, pre-cooked
  • 1 bunch dill, finely chopped
  • 100 g sheep’s cheese
  • some water, maybe

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Greek, starter or light main course

Preheat the oven to 220°C. Heat olive oil in a pan and sauté the onions and garlic until translucent. Stir in the tomatoes, spinach (if desired), and wine, and simmer for about 10 minutes. Add a little water if desired, and season with salt and pepper. Place the shrimp, tomato sauce, and dill in a baking dish. Sprinkle the crumbled feta cheese over the casserole. Bake for 10 minutes and serve hot.
