Potato and pear soup

Ingredients for 6 servings:

  • 2 tbsp butter
  • 2 onions, chopped
  • 3 pears, ripe, peeled, diced
  • 500 g floury potatoes, diced
  • 7 ½ dl vegetable broth
  • Salt
  • pepper, black
  • 4 tbsp schnapps (Williams), to taste
  • 1 ½ dl sweet cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Sauté the onions in hot butter, add the pear pieces, and sauté for about 3-4 minutes. Then add the diced potatoes and deglaze with the broth. Simmer over medium heat for about 20 minutes, until the potatoes are tender; puree. Then stir in the cream. Season with salt, pepper, and Williams peas, if desired. Simmer gently for another 10 minutes. Season to taste, adjust seasoning if desired, and serve garnished with croutons.
