Simple Cream of Asparagus Soup

  • 350 g Fresh asparagus
  • 200 ml Cream
  • 250 ml Broth (beef or vegetable broth)
  • 2 e Creme fraiche Cheese
  • Nutmeg
  • Pepper
  • Salt

preparation

  1. Peel the asparagus, cut into pieces and add to the broth. Simmer for 15 minutes.
  2. Add the cream and creme fraich and puree. Season to taste with salt, pepper and nutmeg. Tip: A pinch of cayenne pepper gives the soup a special touch.
