Ingredients for 4 servings:

  • 4 fish fillets, ready to cook, depending on type and size
  • 2 large fruity oranges, squeezed
  • 500 g mushrooms, sliced
  • 2 cups whipped cream
  • salt and pepper
  • Dill, some chopped

was born out of a whim

Marinate the fish fillets in a bowl with the orange juice. Brown the mushrooms over high heat and transfer to a baking dish. Season the cream with salt, pepper, and dill and whisk until light and fluffy, but not vigorously, until it foams slightly. Place the fillets on top of the mushrooms and pour the marinade into the cream, stirring again. Spread over the fish, cover with aluminum foil, and bake in the oven at 170°C for about 20 minutes. If you like a little color, remove the foil after 12-15 minutes. Serve with any kind of potato or rice. Any fish will do, just make sure it’s boneless; my kids love this fish.
