Vital salad with avocado and goat cheese

Ingredients for 4 servings:

  • 600 g turkey breast
  • 150 g lamb’s lettuce
  • 1 onion(s), red
  • 1 avocado(s)
  • 100 g walnuts
  • 150 g mushrooms, brown
  • 150 g soft goat cheese
  • 4 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp mustard
  • 1 dashes lemon juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cut the turkey breast into bite-sized pieces and sear. Season with salt and pepper. In the meantime, prepare the remaining salad. Wash the lamb’s lettuce. Finely slice the red onion. Halve the avocado, remove the pit, scoop out the flesh, and cut into strips. Roughly chop the walnuts. Clean the mushrooms (do not wash) and slice them into thin strips. Place everything, except the meat, in a bowl. Cut the goat cheese into about 8 pieces and fry on both sides until golden brown. For the dressing, combine olive oil, balsamic vinegar, honey, mustard, salt, pepper, and a squeeze of lemon juice and drizzle over the salad. Arrange the salad on four plates and garnish with the turkey and goat cheese. Approx. 696 kcal per serving.
