Ingredients for 2 servings:

  • 300 g pork fillet(s)
  • 1 onion(s)
  • 1 tbsp, heaped capers and some of the stock
  • ½ tbsp flour
  • 1 tbsp butter
  • 150 ml water
  • 50 ml sweet cream
  • 1 tsp mustard, medium hot
  • 1 stalk thyme, fresh
  • salt and pepper
  • oil

First slice the meat, then cut it into strips across the grain. Cut the onion into wedges. Heat the oil in a pan and brown the meat until golden brown. Add the salt, remove from the pan and set aside. Add the butter to the pan and fry the onion until golden brown. Briefly fry the capers, add the flour, stir through and deglaze with the water. Season with salt and pepper and simmer gently for about 10 minutes. If the sauce is too thick, add a little more water. Pick the thyme leaves and add them to the sauce with the mustard. Stir in the cream and season to taste with a little caper juice, salt and pepper. Now add the meat to the sauce and let it simmer for a few minutes over low heat (do not boil).
