Zucchini pancakes

Ingredients for 4 servings:

  • 400 g zucchini
  • 10 tbsp flour
  • 6 eggs
  • 8 tbsp carbonated mineral water
  • some parsley, chopped
  • Salt
  • 2 bell peppers
  • 100 g feta cheese
  • some salty butter for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

vegetarian

Combine the grated zucchini, flour, eggs, mineral water, chopped parsley, and a pinch of salt. Fry the batter in a pan with a little salted butter until pancakes form, and keep the pancakes warm in the oven. Dice the bell peppers and feta. Sauté the bell peppers in a little butter. Add the feta cheese before serving to warm it up. Serve the pancakes with the bell peppers and cheese.
