Ingredients for 6 servings:
- 500 g asparagus, green
- 100 g flour
- 200 ml milk
- 1 egg(s)
- 60 g Parmesan, freshly grated
- 6 tsp butter
- some salt
Instructions
Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes
Wash the asparagus and peel the bottom third. Cook in boiling salted water for about 5-10 minutes (depending on thickness and desired firmness), then drain and refresh. Mix flour, milk, egg, Parmesan cheese, and a little salt into a batter and let it rest for about 15 minutes. Cook 6 crêpes in hot butter in a pan, then wrap a few asparagus spears in each one.
