Ingredients for 2 servings:

  • 240 g flour
  • 500 ml milk
  • 4 eggs
  • 4 tbsp sugar
  • 1 pinch of salt
  • 6 tbsp raisins
  • 4 tbsp butter
  • powdered sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Mix the flour with the milk, eggs, 2 tablespoons of sugar, and a pinch of salt to form a dough and let it swell. Rinse the 6 tablespoons of raisins and drain well. Melt 2 tablespoons of butter in a pan, then pour in the batter and sprinkle the raisins over the top. Fry over medium heat until the underside is golden brown. Cut off large pieces of the Schmarren, turn over, and add another 2 tablespoons of butter. When the second side is golden brown, sprinkle over 2 tablespoons of sugar. Cut off smaller pieces and fry the Schmarren for another 5 minutes, turning over. Dust with powdered sugar and serve hot from the pan.
