Sweet Quinoa Casserole

Ingredients for 4 servings:

  • 100g quinoa
  • 250 ml water
  • 250 g quark
  • 80 g sugar
  • 15 g butter, room temperature
  • 2 eggs
  • 1 tbsp flour
  • ½ pack of baking powder
  • 1 can of fruit (e.g. tropical), possibly
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 10 minutes

Dessert with fruits

Rinse the quinoa thoroughly and boil in water until tender. Separate the eggs. Whisk the egg yolks, quark, sugar, and butter until fluffy. Add the flour and baking powder, then stir in the slightly cooled, cooked quinoa and the fruit. Beat the egg whites until stiff peaks form and carefully fold into the mixture. Pour the batter into a greased baking dish and bake at 180°C (fan oven) for about 40 minutes. Serve with compote or a fresh fruit salad.
