Ingredients for 1 servings:

  • 200 g jacket potatoes
  • 1 onion(s), red
  • 60 g chicken broth or vegetable broth
  • 1 tbsp vinegar (honey vinegar)
  • 1 tsp mustard
  • Salt and pepper, black, from the mill
  • 1 pinch(s) of sugar
  • 2 tbsp olive oil
  • 1 thin spring onion(s)
  • 100 g cherry tomatoes or date tomatoes

Peel the boiled potatoes, cut into cubes or slices, and set aside. Peel and finely dice the onion. Finely chop the spring onions. In a bowl, combine the broth with the onions, vinegar, oil, mustard, sugar, salt, and pepper. Stir in the spring onion slices and fold in the potatoes. Halve the tomatoes, fold them into the potatoes, and season to taste with salt and pepper. Arrange the salad in a bowl, garnish, and serve. 475 kcal per serving.
