White cabbage slices with minced meat

Ingredients for 6 servings:

  • 400 g wheat flour
  • 200 g rye flour
  • 42 g yeast
  • 400 ml water, lukewarm
  • some salt
  • Grease for the tray
  • 500 g white cabbage, cut into noodles
  • 500 g minced meat
  • 1 large onion(s), finely chopped
  • 2 cloves garlic, finely chopped
  • 1 small chili pepper(s), dried, finely chopped
  • 100 g bacon, cut into strips
  • 100 g mountain cheese, grated
  • some oil
  • salt and pepper

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 35 minutes

For the dough, dissolve the yeast in lukewarm water, add it to a bowl with both types of flour, add a little salt, and knead into a smooth dough. Cover and let rise. Meanwhile, for the topping, fry the onion in a little oil until light brown, add the minced meat, and sear well. Then add the white cabbage, bacon, garlic, and chili pepper, season well with salt and pepper, and let roast uncovered for about 10 minutes. Set aside and let cool slightly. Roll out the risen yeast dough to about 1 cm thick and place on a greased baking sheet. Spread the white cabbage and minced meat mixture over the dough and sprinkle with cheese. Bake in a preheated oven at 180°C (top/bottom heat) for about 30-40 minutes.
