Ingredients for 4 servings:
- 800 g pork loin
- 3 onions, white
- 500 g bell pepper(s), red
- 2 cloves garlic
- 2 tbsp tomato paste
- 500 ml tomatoes, pureed
- 100 ml water
- 3 tbsp vegetable oil
- 1 tsp brown sugar
- ½ tsp rosemary, dried
- ½ tsp thyme, dried
- ½ tsp oregano, dried
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes
Cut the pork into large cubes. Wash and deseed the bell peppers, then cut them into large cubes. Peel the onions and cut them into large wedges. Peel and finely chop the garlic. Briefly sear the pork on all sides in a large pot with 2 tablespoons of vegetable oil, then remove. Now sear the bell peppers in the fat from the meat for a few minutes, then remove. Add the onions, garlic, and tomato paste to the pot and sauté for a few minutes with 1 tablespoon of vegetable oil. Now return the meat and bell peppers to the pot, deglaze with the passata and about 100 ml of water, and bring everything to a boil. Season with sugar, rosemary, thyme, oregano, salt, and pepper, then simmer over medium heat for about 90 minutes. Potatoes go very well with this.
