Nougat brittle ice cream

Ingredients for 4 servings:

  • 180 ml milk (whole milk)
  • 180 g cream
  • 3 egg yolks
  • 50 g sugar
  • 200 g nougat
  • 50 g almonds or hazelnuts, chopped
  • 2 tbsp powdered sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

Combine the chopped almonds and powdered sugar in a pan and stir until caramelized, then let cool. Bring the milk and cream to a boil briefly. Melt the finely chopped nougat in it and let cool slightly. Whisk the egg yolks and sugar in a bowl. Add the nougat, cream, and milk mixture and beat over a hot water bath until creamy. This takes about 6-8 minutes. Then stir in an ice water bath until cold. Refrigerate the mixture for about half an hour. Pour the ice cream mixture into the ice cream maker and freeze until creamy in about 30 minutes. After 20 minutes, add the brittle.
