Wild garlic – capers

Ingredients for 1 servings:

  • 1 cup wild garlic buds
  • 1 tsp salt
  • 125 ml vinegar (herb vinegar)

Instructions

Sprinkle the still-closed flowers with salt and let stand for a few hours. Bring the herb vinegar to a boil and let the buds simmer briefly. Strain the vinegar and bring it to a boil again. Pour the vinegar into a small screw-top jar along with the flower buds and seal tightly. After a few days, bring the vinegar to a boil again and add the buds back to the jar. Store in a cool, dark place. After about two weeks, you can enjoy the fake capers. Serve the wild garlic capers on an appetizer plate like olives.
