Ingredients for 1 servings:

  • 250 g butter
  • 2 tsp honey (flower honey)
  • some elderflower umbels

Plucking the delicate blossoms from the umbels is easy with a fork. Cream the room-temperature butter with a mixer until creamy, add the honey and blossoms, and fold in with a silicone spatula. Wrap the butter in foil or spread it into silicone muffin cups and let it set in the refrigerator. It tastes delicious on scones or on a slice of plaited bread. I also make this sweet butter with other fragrant blossoms, such as thyme blossoms, rose blossoms, and dead-nettle blossoms (very fine).
