Ingredients for 3 servings:
- 2 small zucchini, approx. 400 g
- 1 small onion(s)
- 1 garlic clove(s)
- 7 tbsp olive oil
- 1 pinch of chili flakes
- 1 tsp cumin
- 1 pinch(s) of sugar
- pepper
- Salt
- rosemary
- basil
- Thyme
- oregano

Wash the zucchini and slice thinly. Make a marinade with the chili flakes, cumin, sugar, pepper, salt, and 3 tablespoons of olive oil. Toss the zucchini with the marinade. Arrange the marinated slices on two baking sheets lined with baking paper and bake at 220°C for about 25 minutes, turning halfway through. While the zucchini is sizzling in the oven, prepare another marinade. Finely dice the onion and garlic clove. Finely chop the herbs and mix everything with 4 tablespoons of olive oil. Remove the zucchini from the oven and place them together on a baking sheet. Drizzle the marinade over the slices. Carefully transfer the marinated zucchini slices to sterilized jars and fill with oil until all are covered. Seal tightly. Stored in the refrigerator, the jars will last for at least a week.
