with delicious sauce
Mix the minced meat with egg, an onion, a clove of garlic, a tablespoon of tomato paste, mustard, and breadcrumbs. Season with salt, pepper, paprika, and chili powder, and knead into a smooth meat dough. Stuff the prepared peppers with the meat mixture. Set aside. Sauté the remaining onions and garlic in a little olive oil in a saucepan until translucent. Add the diced peppers and fry briefly. Add the diced tomatoes and fry briefly. Add the spices, tomato paste, soy sauce, and vegetable stock. Place the peppers on top of the vegetables and pour in the red wine. Cover the pan and simmer the dish over medium heat for about 1 hour. Remove the peppers and keep warm. Either puree the sauce or leave it as is, thickening it with a little cornstarch if desired. Serve with cooked rice.
