Ingredients for 3 servings:
- 750 g zucchini
- 1 tbsp, heaped dill, dried
- 2 tbsp onion(s), dried
- 1 tsp garlic, dried
- 1 tsp vegetable stock powder
- 100 ml dry white wine
- 1 rack of lamb, approx. 600 g
- 4 tbsp olive oil
Instructions
Working time approx. 20 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 40 minutes; Total time approx. 5 hours
Dice the zucchini and toss with all the marinade ingredients. Refrigerate the zucchini for four hours, stirring occasionally. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Toss the zucchini with oil and place in a roasting pan. Place the crown of lamb on top of the zucchini and cook in the oven for about 40 minutes. Cut the crown of lamb into pieces on the bone and serve with the vegetables.
