Ingredients for 2 servings:
- 300 g pasta, approx., variety of your choice
- 375 g leaf spinach, frozen
- 2 m.-sized onion(s)
- 2 garlic cloves
- 200 g feta cheese
- 100 ml vegetable stock
- 1 cup of cream, approx. 200 g
- salt and pepper
- 2 tbsp olive oil for frying

Thaw the spinach leaves. Cook the pasta in salted water according to the package instructions. Peel the onions and garlic. Dice the onions and finely slice the garlic. Dice or crumble the feta cheese. Heat the olive oil in a large saucepan over medium heat. Sauté the onions and garlic. Squeeze out some of the liquid from the thawed spinach leaves and add it. Pour in the stock and simmer the vegetables with the lid on for about 8-10 minutes. Add the cream and bring to a gentle boil. Add the feta and let it partially melt over low heat. Season the dish with salt and pepper. Add carefully, as the stock and feta make the sauce quite salty. Drain the pasta and serve with the spinach and feta sauce.
