Ingredients for 3 servings:
- 5 tbsp olive oil
- 5 tbsp balsamic vinegar
- 5 tbsp red wine vinegar
- 10 ml water
- 3 tbsp elderflower syrup or honey
- 1 tsp, heaped mustard, hot or mild
- 7 tbsp cream, alternatively milk
- 1 tsp herbal salt or vegetable stock powder
- 3 tbsp herbs
- 1 dash of Worcestershire sauce or Maggi
- n. B. Pepper, black

Mix all ingredients together and pour over the salad. Here are a few more ideas: Herbs are a matter of taste. I recommend using and/or: dill, parsley, chives, Italian herbs, salad herbs, and, if you like that sort of thing, a little mint. Other good additions include: nutmeg, paprika, and occasionally I use sweet mustard instead of regular mustard, saving on the honey. If you use honey instead of elderflower syrup, you can simply microwave it in a cup for a few seconds; solid honey will turn into liquid. Don’t run off; it happens very quickly.
