Salmon with mustard crust

Ingredients for 4 servings:

  • 4 salmon fillets
  • some mustard, hot
  • some flour, instant
  • some olive oil for frying
  • 4 chicory
  • some dill tips for garnish
  • 1 shallot(s), diced
  • 3 tbsp red wine vinegar
  • 1 tsp mustard
  • 5 tbsp olive oil
  • 1 pinch(s) of sugar
  • some salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Halve the fish lengthwise and brush with mustard on both sides. Then coat in flour and fry in a non-stick pan with slightly hot olive oil until golden brown. For the marinade, mix all ingredients well. Cut the chicory into strips and arrange on plates. Place the salmon on top, drizzle with the salad dressing, and garnish with dill sprigs. Tip: Schrat’s dressing for leaf salads also works well here.
