Spaghetti with Bolognese sauce

Ingredients for 4 servings:

  • ½ celeriac
  • 2 onions
  • 2 carrots
  • 2 tbsp olive oil
  • 400 g minced beef
  • 200 g tomato paste
  • 1 class can/n tomatoes (pizza tomatoes, 400 g)
  • 300g spaghetti
  • Salt
  • pepper
  • Balsamic vinegar
  • 4 tsp Parmesan, grated
  • possibly water if needed

Peel the celeriac, onions, and carrots and dice them very finely. Heat olive oil in a pan and fry the minced meat until crumbly. Then add the diced onions, celery, and carrots and fry for 5 minutes. Stir the tomato paste and pizza tomatoes into the meat mixture, adding a little more water if needed. Let everything simmer for 10 minutes. Meanwhile, cook the spaghetti according to the package instructions until al dente. Season the sauce with salt, pepper, and a dash of balsamic vinegar. Divide the spaghetti and sauce among 4 plates and serve, sprinkled with 1 teaspoon of Parmesan cheese on each plate.
