Monkfish with Southern Comfort

Ingredients for 2 servings:

  • 1 monkfish loin
  • 1 large bell pepper(s), red
  • 15 olives
  • 8 cl liqueur (Southern Comfort)
  • 200 g tomatoes, mixed
  • 2 tbsp olive oil
  • 1 tsp garlic, dried
  • 1 tsp onion(s), dried
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Finely dice the bell pepper. Slice the olives and tomatoes and mix with the garlic and onions. Place everything in a baking dish and pour over the Southern Comfort dressing. Cut the fillets into 5 cm wide pieces and place them on top of the vegetables. Cook, covered, for about 30 minutes. Season with salt and pepper to taste.
