Cheese – Cabanossi – Muffins

Ingredients for 4 servings:

  • 200 g Cabanossi
  • 200 g cheese, grated (Emmental)
  • 2 bunches of chives or a packet of frozen herbs of your choice
  • 80 g butter
  • 300 g flour
  • 4 tsp, leveled baking powder
  • 2 eggs
  • 125 ml milk
  • 125 ml buttermilk
  • some fat for the mold or paper baking cups

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

makes 12 muffins

Finely dice the Cabanossi. Rinse the chives, shake dry, and cut into fine rolls. Defrost the frozen herbs slightly. Preheat the oven to 180°C (top/bottom heat), 160°C (fan oven), and gas mark 2. Melt the butter and let it cool slightly. Mix the flour well with the baking powder. Lightly beat the eggs with the milk and buttermilk. Stir the egg wash and butter into the flour. Fold in the Cabanossi, herbs, and Emmental cheese. Arrange paper baking cups on the muffin tin or grease the tin well. Pour in the batter. Bake on the middle rack for 25 to 30 minutes, until the muffins are golden brown. Serve warm with a mixed salad and a dollop of sour cream, or cold as a snack.
