Green asparagus with herb quark sauce

Ingredients for 2 servings:

  • 500 g asparagus, green
  • some salt
  • some vegetable stock powder
  • some flour
  • 4 tsp, heaped herb curd

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the asparagus and rinse thoroughly. Bring a pot of water, a little salt, and the broth to a boil. Simmer the green asparagus for about 10-15 minutes; it shouldn’t get too soft. Then drain the asparagus. Mix a little flour with water in a cup, stirring well to remove any lumps. Stir this mixture into the asparagus stock and bring everything back to a boil until a smooth sauce forms. Fold in 3-4 heaped teaspoons of herb curd, mix everything thoroughly, and season to taste. Add the green asparagus, whole or chopped, to the sauce. It goes well with almost anything, including potatoes, dumplings, and potato dumplings.
