Wild salmon burger and Asian broccoli

Ingredients for 2 servings:

  • 230 g chopped salmon (wild salmon) or other fish
  • 1 tbsp Dijon mustard
  • 1 egg white, beaten
  • 1 tsp lemon juice
  • 1 tsp dill
  • 1 tsp horseradish
  • oil
  • salt and pepper
  • 250 g broccoli
  • ½ cup celery, chopped
  • 2 garlic cloves, finely chopped
  • 2 tsp ginger
  • 1 cup water
  • 4 tsp soy sauce

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

For the wild salmon burgers, add the wild salmon, Dijon mustard, egg white, lemon juice, dill, and horseradish to a large bowl. Mix well, season with salt and pepper, and form into 4 small burgers. Spray a nonstick pan with oil and heat over medium heat. Add the burgers and cook until golden brown on each side. Heat a pan over high heat, add the oil, add the broccoli and celery, and cook for two or three minutes, stirring. Then add the garlic and ginger. Finally, add the water, soy sauce, and a little more oil. Cook until the broccoli is tender but still firm to the bite.
