Ingredients for 4 servings:

  • 2 handfuls of sprouts (hop shoots)
  • 150 ml vinegar
  • 150 ml water
  • 1 tbsp honey
  • 1 pinch of salt
  • 1 pinch(s) of seeds (charlock seeds or mustard seeds)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes

Bring the vinegar to a boil with water, honey, salt, and mustard seeds. Simmer the sprouts in the vinegar for 4 minutes. Layer the sprouts in tall jars and pour the hot liquid over them. Seal the jars and store in a cool, dark place. The sprouts make a delicious addition to salads and appetizers, and they also make a great garnish for rolls. Tip: Pumpkin seed oil pairs particularly well with the sprouts.
