Peach cake in a jar

Ingredients for 1 servings:

  • 250 g peach(s), from the can
  • 125 g butter or margarine, soft
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 3 m.-sized eggs
  • 200 g wheat flour
  • 2 tsp, leveled baking powder
  • 2 tbsp milk

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

for 6 tumblers of 160 ml each

Preheat oven to 180 degrees Celsius. Drain peaches well in a sieve. Cut 2 peach halves into thin wedges, dice the remaining peaches. In a bowl, cream the butter or margarine with a mixer on high speed until smooth. Gradually add the sugar, vanilla sugar, and salt, stirring until the mixture forms a thick batter. Beat in each egg for about 1/2 minute on high speed. Mix the flour with the baking powder and briefly stir in two batches, alternately with the milk, on medium speed. Fold the peach cubes into the batter and divide it evenly among the jars. Arrange the peach slices on top and bake on the bottom rack for about 35 minutes. Seal the jars immediately after baking.
