Turkey with curry vegetables

Ingredients for 2 servings:

  • 2 turkey schnitzels
  • 400 g carrot(s)
  • 2 peppers
  • 2 garlic cloves
  • 200 ml chicken broth
  • 2 tbsp oil
  • 1 tbsp curry powder
  • 1 tsp curry paste
  • 1 tsp, heaped tomato paste
  • 2 tbsp condensed milk or coconut milk
  • ½ tsp coriander powder
  • 1 tsp paprika powder
  • Salt
  • 1 tsp parsley, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the schnitzels and pat dry. Thinly slice the vegetables and dice the garlic. Fry the schnitzels without oil in a hot, nonstick pan until lightly browned. Remove the meat from the pan and set aside. Add oil to the pan and sprinkle with curry powder. Sauté with the vegetables and garlic, then deglaze with the broth. Cut the meat into strips, add it, and cover and cook over medium heat for 10 minutes. Season to taste with milk, curry paste, tomato paste, spices, and parsley.
