Tomato-feta-spinach-cream cheese rolls

Ingredients for 4 servings:

  • 8 wraps
  • 500 g spinach, fresh or frozen
  • 250 g cocktail tomatoes
  • 150 g natural yogurt
  • 200 g feta cheese
  • 100 g cream cheese
  • 4 tbsp herb mix, frozen (e.g. 8-herb mix)
  • 1 tbsp tomato paste
  • salt and pepper

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

Heat the spinach in a pan until it wilts, then let it cool. Squeeze the spinach to dry it as much as possible, then set aside. Combine the yogurt, cream cheese, herbs, and tomato paste until smooth. Finely chop the cherry tomatoes and feta cheese and stir in. Season the mixture well with salt and pepper. Spread the mixture, not too thickly, over the wraps, then add a second layer of spinach. Roll up the wraps and trim off the ends (and eat). Then cut the roll into 8-10 equal-sized pieces. Refrigerate the rolls until ready to serve.
