Ingredients for 1 servings:
- 1 kg pumpkin flesh, prepared, weighed
- 20 g ginger root
- 60 g candied lemon
- 450 g sugar
- 850 ml white wine vinegar
- 1 cinnamon stick(s)
- 1 tbsp cloves
- 500 ml water

A lovely gift from the kitchen
Finely dice the pumpkin flesh. Grate the ginger. Finely chop the candied lemon peel. Mix the water with the vinegar. Add the ginger, candied lemon peel, sugar, cinnamon stick, and cloves and bring to a boil. Add the pumpkin and bring to a boil. Cook for about 7 minutes, until the pumpkin is tender. Immediately fill jars and seal.
